Day 20: A Favorite Recipe

One of my favorite recipes comes from my sis/mother-in-law, Ashlee and Charmaine. It's a copy-cat of Cafe Rio chicken. Super easy, super yummy!!

In a crock-pot place:
4-6 frozen chicken breasts
1 cup fresh pico-de-gallo
3/4 cup brown sugar

Cook on low until cooked through and easily shredded. Serve as tacos! (There's a recipe for the Cilantro-Ranch Dressing but I haven't memorized it.. it's yummy as well, though.)

Day 19: A Picture of Something That Makes Me Happy

Here's a picture of me and my wonderful hubby. I love him more than words can say and he has the ability to make me happy no matter what. I'm so blessed to have him in my life!!

Sorry I haven't kept up with this.. contrary to what you might think, summers for teachers are actually extremely busy! I'll have to update more on here soon.. seriously!

Day 18: Someone or something you could definitely live without.

Hmm... this could go so many different ways! I don't think I'll answer the someone part except to say that I believe that people come in and out of your life for a reason and I try to surround myself with people that are loving and supportive. As for the something, I'd have to go with... bills. Or early mornings. Or both :)





On a different note, here's a picture of what my students are making their mom's for Mother's Day- magnets! Also, I put up a picture of my CUTE door that my students' parents put up for me for teacher appreciation week. I LOVE it! I have so much support and feel so lucky to be a teacher at Channing! It's such a great school. Sad to think the year is almost over!

Day 16: Someone you'd like to be for one day and why.

So I took a couple of days to think about this. I was trying to think of someone who travels or goes to the beach (seriously.. that's all that's been on my mind lately.. I just want to go relax at the beach!). But, I couldn't really come up with anything. So I've decided I'd want to be one of my students for a day and see how it would be having me as a teacher. Since I got on the topic of teaching.. here's my funny story for the week for you: One of my students came in on Thursday with a HUGE (like 2 inch in diameter) "hickey" on his neck. He proudly came up to me, lifted up his head and said, "Mrs. Wright! Look!" I wasn't expecting that.. so I asked him what happened. He told me his sister stuck the vaccuum on his neck. I couldn't stop laughing. It was bright red and splotchy! So funny. Well, his mom comes in to volunteer so I told her later that day that it made me laugh any time I thought about it. She asked if he told me the story and I replied, "Yeah, he said his sister put the vaccuum on his neck." Turns out it wasn't his sister.. he did it to himself! When his mom first saw it, he played it off like he didn't know what had happened. A little while later he said, "Could a vaccuum do something like that..?" I still laugh when I think about it.. :)

Day 15: A travel story.

Best travel story... Brayden surprised me for our honeymoon. I had no idea until we went to the airport where we were going or what we were going to do. We ended up staying on the beach in Fort Lauderdale, FL for 4 days and then went on a 4 day cruise to the Bahamas, Key West and Cococay. AMAZING. I'm still trying to get Brayden to take me back. I want to live in Fort Lauderdale.. I loved it that much! (Probably because I didn't worry about anything but getting to the beach to lay out.. my heaven!)
